Diced Beef with Garlic & Black Pepper 黑蒜子牛肉粒

Ingredients:
1.22 lbs. (550g) boneless beef ribeye steak (or beef tenderloin, sirloin steak)
40 cloves garlic, trim off top end
Cooking oil
Beef marinade:
2 scallions (white end parts only), minced.
4 slices ginger, minced
1 tbsp rice wine
1 tbsp soy sauce
½ tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp ground black pepper
------Mix in about 5 minutes prior to frying-----
2 tbsp corn starch
1 tbsp flour
Stir-fry sauce:
¼ stick butter
3 cloves garlic, minced
2 tbsp rice wine
1 tbsp soy sauce
½ tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp ground black pepper
½ tsp ground white pepper
1 ½ tbsp sugar
Instructions:
1. Marinate diced beef with beef marinade for 30 minutes. Mix in corn starch and flour a few minutes before frying.
2. Heat up cooking oil in a heavy bottom pan to (320°F/160°C), fry garlic cloves till golden.
3. Reheat the oil to (320°F/160°C), fry the beef chunks in batches till golden. Separate pieces that are stuck together to ensure even frying.
Place on a cooling rack or a plate.
4. Heat the oil to (350°F/ 180°C, fry the beef again until golden brown. Fetch out and set aside.
5. Melt butter from the stir-fry sauce in a new pan. Add minced garlic, ground black pepper, ground white pepper, and the rest of the sauce ingredients. Stir fry quickly to release garlic aroma and the sauce thickens a little.
6. Add fried garlic and beef chunks in. Stir-fry quickly and ensure both garlic and beef pieces are evenly covered in sauce.
